This recipe is really easy and tasty. I use some basic ingredients, so it can be modified with any cheese and sauce you like.
Spanish Iberico Cheese: Made with a blend of three types of milk, of medium size (around 6.6lb) which is produced in an industrial manner, mostly in the central plateau of the Iberian Peninsula. It’s a soft cheese, delicious, and broadly consumed in Spain, exported and it is appropriate for all tastes.
To prepare the Chicken breast au gratin with Iberian cheese
Ingredients the Chicken breast au gratin with Iberian cheese
– 200 grams of mash potatoes
– 1 table spoon of Extra virgin olive oil (contact us to buy unique EV olive oil)
– 1 small or medium chicken breast, preferably corn fed chicken
– Maldon Salt and black pepper
– 3 to 4 table spoons of tomato sauce, you can use your own or buy any other handmade sauce. I will be posting a new sauce recipe in the next few days.
– A small spoon of butter for the mash potatoes
– 3 small slices of Iberico Cheese (contact us to buy Spanish cheeses)
Step By Step
I – Peel the potatoes, cook them and mash them, reserve for later
II – Preheat the oven to 200 degrees celsius
III – In a saucepan add the extra virgin olive oil and when the oil is hot, panfry the chicken breast 1 minute each side, put it in an oven tray and put it in the oven. Cook in the oven for 8 minutes
Tip: During this time warm up the tomato sauce and the mash potatoes with the butter in separate pans
IV – After that, place 3 slices of cheese on top of the chicken and cook for another 5 minutes
V – Plate the Mash potatoes on the base of the plate
VI – Add the tomato sauce on the side of the mash
VII – Put the chicken on top and you can decorate with parsley or other herbs. Sorry but when I took this photo I did not have any herbs to decorate this recipe
